    摘要:

    探讨了缺铁胁迫与外源VC对小白菜生理和品质的影响。结果表明:缺铁较大幅度地降低了叶绿素含量及NR、POD活性,导致蛋白质、糖及VC的含量减少,而硝酸盐的积累量显著增加,使蔬菜的营养及卫生品质下降;外源VC能在一定程度上减轻缺铁胁迫对蔬菜的一系列不良影响。

    Abstract:

    Taking Chinese cabbage as experimental material,the effect of iron-deficient stress and exogenous VC on physiological metabolism,and quality of vegetables were studied. As a result, it indicates that iron-deficient reduces the content of chlorophyll and the activity of NR?POD to greater extent,and results in reducing the content of protein, soluble sugar and VC,while remarkably increasing the content of nitrate; so the hygienic quality and nutritious quality of Vegetables are reduced. Exogenous VC to some degree ,reduces a series of bad effects of iron-deficient stress on vegetables.
